Vitelotte (fr. 'Vitelotte' or Vitelotte Noire), also called Negro (fr. Négresse), Chinesetruffle (fr. Truffe de Chine) or Blue French truffle potato (German Blaue französische Trüffelkartoffel)) is a type of potato. The tubers have a dark purple, almost black skin and dark purple pulp due to the high content of anthocyanins; oblong shape, as a rule, no more than 10 centimeters in length. The average weight of one tuber is about 70 grams. Potatoes retain their color during cooking. Potatoes have a thick skin and therefore lie well. Due to the significant content ofstarch it boils hard, ideal for preparing mashed potatoes, which will have a rich lilac color.
