Spelled (Triticum spelta L.) is a hexaploid species of wheat that was widespread in ancient times and then disappeared from crops, remaining only in small areas. The variety is Zorya of Ukraine, registered by the All-Ukrainian Scientific Institute of Breeding in 2012.
Compared to wheat, spelled has a lower reaction to soil impoverishment. Under conditions of lack of nutrients, spelled wheat loses less yield, while showing high quality indicators. Spelled is characterized by pronounced frost resistance. It tolerates low temperatures well at different stages of development, which makes it possible to carry out sowing with a wider time range - from the beginning of September to the end of November (weather permitting)
Among the main properties of spelled are its high quality indicators. This especially applies to the content of protein (up to 25%) and gluten (up to 50%). This makes it possible to use spelled flour both separately for the production of bakery and pasta products, and as an improver for low-quality flour. Macronutrients: the potassium content is 10–15% higher than that of ordinary wheat, phosphorus – 60% higher, sulfur – 70%, magnesium – 35%, the same amount of calcium. Micronutrients: zinc content is 25–30% higher than that of ordinary wheat, copper – 15%, iron – 5–10%, selenium – 100–200%, manganese – 15–20%. As for the amino acid composition, spelled has an average of 50% higher than common wheat, the number of each amino acid, and fiber - by 10%.
