We are buying block beef GOST 2 grade, dry freeze.
The monthly requirement is 80 tons.

Pieces of meat are voluminous, naturally shaped, taken from the carcass of young animals of normal fatness, cut from various parts of the carcass weighing at least 150-200-300 g, voluminous.
Smell: natural, characteristic of frozen meat, without extraneous.
It is not allowed: the presence of bones, cartilage, tendons and coarse connective tissue, blood clots, lymph nodes, impurities of offal, meat from heads, extraneous impurities and inclusions.
The maximum defrost percentage is 3-4%, the fat content is up to 20%.
Meat should not be boiled more than 40%.
