Principle of operation
This method is used for simple and practical determination of the effect of enzymes onquality of flour or wholemeal, as well as measurement of natural and alpha-amylase enzymes. During the test, enzymes contribute to starch hydrolysis. By measuring the rheological characteristics of hydrolyzed starch, the activity of the enzyme is determined naturally.Starch, which is used in this method as a substrate, provides faster pasteurization of an aqueous suspension of flour in a boiling water bath. At the end of the test, a value above 300 means low enzyme activity, and a value below 200 means high enzyme activity.
