Starch is a polysaccharide that acts as a reserve material for plants. Crystalline structures of starchgrains formstarch macromolecules with a branched structure - amylopectin and micromolecules with a linear structure - amylose. Since amylose and amylopectin differ in many essential properties, the proportion in which they are contained in a certain form of starch determines its physical and chemical properties. Starch is one of the most multifunctional types of raw materials in the food industry. In the applied part, its natural properties of gel formation and thickening are used. In the food and pharmaceutical industry, starch is used to give products the appropriate texture, appearance (form), moisture, consistency and stability during storage.
