The first is exclusively filtered to remove impurities, while all valuable components are preserved. This is the most useful type of oil with a characteristic astringent smell and a rich, dark color. The unrefined product has a short shelf life, which should be taken into account when buying: in oil that has been standing for a long time in a light display case, sediment and a rancid taste appear.
